Kevin and I have been trying to eat more healthy these days and so I have been searching for new recipes to try that are low-calorie so we don’t get burned out on the same baked chicken and veggies every night. I came across a site where a woman had posted this recipe for low-calorie chicken but of course, can’t remember the site to give her the credit. It’s made in the crock-pot, which is even better! Pair it with a “light” hamburger bun and you can eat one of these without feeling guilty! Star Rating: 3 out of 5 stars. Not great but not bad — we’d make it again.
1-1/2 lbs raw, boneless chicken
1 cup canned tomato suace
1/2 cup ketchup
2 tbsp. plus 2 tsp. brown sugar (not packed)
2 tbsp. plus 2 tsp. cider vinegar
2 tsp. garlic powder
Place all ingredients except chicken in the crock pot and stir until mixed.
Ad chicken and coat well with the sauce.
Cover and cook on high for 3-4 hours OR on low for 7-8 hours until chicken is fulled cooked.
Either shred right in the crockpot or if easier, take out, shred and then put back in pot.
